In India one of the famous snacks is vadai. Nearly 42 variety vadas such as masal vada, medu vada, rava vada, amai vada, keerai vada… Among these vadas medu vada is the most sought-after dish at any South Indian restaurant. This medu vada also named as ulundu vada, uzhunnu vada, garelu vada in different languages.
This medu vada is slightly different from other vada. As this vada has hole at its centre. Based on this these are many comedy scenes were created in films. But the reason is the dense of dough prepared for medu vada is more and water content also slightly more compared to other vada dough. If we fry the dough without hole for medu vada the centre portion will not cook well.
In case we try to fry that center portion also the outside get deep fry which make the vada to dispose i.e. unable to eat. So the hole is made at the centre , this help the vada to fry fast and well cook.
