Our tongue have nearly 10,000 taste buds which are replaced every two weeks. In aged person some of the cells are not replaced and remain as inactive bud. So old person may have only 5,000 working taste buds. Taste signals begin when food particles are sensed by receptor protein on taste bud cells .
The seven most common flavors in food that are directly detected by the tongue are: sweet, bitter, sour, salty, meaty (umami), cool, and hot. Our sensory organ receives sensory information from brain and body act on these message.
After eating sweet if we take tea or coffee we not feel the sweet taste. Because accustomed to constant signal it tend to ignore it. Constant taste sweet things because usual and our brain doesn’t notice the difference. When you eat lot of sweet your taste buds get used to that amount of sweetness called sensory fatigue.
