It is an Australian fruit is a thorny shrub or small tree which is found in the lowland subtropical rainforest and rainforest in the coastal border region of Queensland and New South Wales, Australia. It is also called caviar lime due to the shape and feel of the small bubbles of citrusy juice. The bubbles of juice look like caviar, hence the name.
Finger limes vary in size, shape, colour, and seediness. The fruit's skin color can range from yellow-green to crimson, purple, and black. Depending on the outside skin color the inside fruit color also changes. The fruit tastes tart and citrusy like a lemon or lime. It sometimes tastes like grapefruit because of the oils in the skin.
There is a certain method that is used to cut a finger lime. The fruit should gently be cut lengthwise so that the caviar-Esque pearls do not get cut too. Slowly the caviar-Esque pearls should be taken out and used. The pearls can then be used to decorate cakes and cheesecakes, salads, or even as pulp in vinaigrette and citrus curds. It is also used as a substitute for lime juice.
